Slithery Spaghetti – IF
The last time I submitted my drawings was back in October 2009 and the topic was Fast. I am making a comeback. Here’s a plate of my favourite Spagheti Vongole, drawn from a picture I took while in Rome back in March.
Found a recipe by Jamie Oliver. Will try and make it next weekend. And oh, which one is the best substitute for wine: apple cider vinegar, grape juice or tamarind juice? Let me know your thoughts. Thank you!

I just omit wine sometimes – my kids donรยดt like the smell of it in food… Iรยดm a barbarian…:)

Luv, I must vote for the non-alcoholic ‘wine’ – fermented unsweetened grape juice. I’ve tried with cider, it’s a bit too acidic to my liking. Tamarind juice, on the other hand, would be too ‘heavy’ and too brown. I can actually get you a bottle of the non-alcoholic wine from my friend’s cellar near La Risatta Ampang.
Otherwise, omitting the wine/cider/tamarind would NOT affect the taste. You can actually do without, Emila.

If it is the alcohol you are worried about it should cook out in this recipe. To be sure, you can boil it before using it if you like, this will cook away the alcohol. (alcohol evaporates at 172รยฐF (78รยฐC)) You could even reduce it by simmering until it is reduced by at least 1/3 and use some broth or pasta water with it if you wanted to be very sure. Just add enough broth/pasta water to make up the difference before adding it to your dish. You can leave it out and substitute water or broth if you like, but if you leave it completely out you will not have the same taste if you are trying to recreate what you had in italy. Hope this helps. : ) Love the illustration too. Looks yummy.
